Beef Satay

Ingredients
- 1 1/2 lbs flank steaks
- 1/4 cup soy sauce
- 1/4 cup vegetable oil
- 2 tablespoons asian chili sauce (to taste)
- 1/4 cup packed dark brown sugar
- 1/4 cup minced fresh cilantro leaves
- 2 garlic cloves, minced
- 4 scallions, and green parts, sliced thin
Recipe
- 1 cut the flank steak in half lengthwise and put in freezer for 30 minutes (to firm).
- 2 combine soy sauce, oil, chili sauce, brown sugar, cilantro, garlic, and scallions in measuring cup, set aside.
- 3 remove the flank steak from freezer and slice each piece across the grain into 1/4-inch-thick strips. weave the meat onto bamboo skewers (should make about 24 skewers).
- 4 dunk the meat ends of the skewers into marinade to coat; lay the skewers in a shallow dish and pour remaining marinade over top. refrigerate for exactly 1 hour.
- 5 you can either grill the beef or adjust oven rack to top position and heat broiler. lay the skewers on a wire rack set over a rimmed baking sheet and cover skewer end with foil. broil for 6 to 7 minutes, flipping the skewers over half way through, until meat is browned.
- 6 serve immediately with peanut sauce.
