Curried Lamb And Pepper Stir Fry

Ingredients
- 2 garlic cloves, minced
- 2 teaspoons fresh ginger, minced
- 2 teaspoons curry powder
- 1 teaspoon ground coriander or 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 lb boneless lamb, cut into strips
- 1 tablespoon peanut oil
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 8 ounces pineapple chunks in juice
- 2 tablespoons honey
- 1 tablespoon cilantro, chopped
Recipe
- 1 combine garlic, ginger, curry powder, coriander (or cumin), salt, cayenne and toss with lamb strips.
- 2 heat oil in a large skillet or wok and cook lamb 2 to 3 minutes.
- 3 stir in peppers. cook 3 to 4 minutes.
- 4 add pineapple, juice and honey. cook 2 minutes.
- 5 stir in cilantro and serve.
