Bits-n-pieces Granola Bars

Ingredients

  • 1 1/2 cups crispy rice cereal
  • 2 cups old fashioned oats (or quick cooking)
  • 1/4 cup raisins
  • 1/4 cup dried dates
  • 1/4 cup sweetened coconut
  • 1/4 cup sliced almonds
  • 1/4 cup pecans, chopped
  • 1/4 cup sunflower seeds
  • 1/4 cup wheat germ
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup light corn syrup
  • 2/3 cup crunchy peanut butter
  • 1 teaspoon vanilla

Recipe

  • 1 combine all dry ingredients except brown sugar in a large bowl.
  • 2 in a small sauce pan combine brown sugar and light corn syrup.
  • 3 heat until just boiling while stirring constantly (do not cook longer to avoid scorching sugar).
  • 4 remove from heat. stir in peanut butter and vanilla.
  • 5 add peanut butter mixture to dry ingredients.
  • 6 quickly combine, then press into an ungreased 9"x13" pan. i wet my hands with cool water, then firmly press the mixture as flat as possible.
  • 7 once cool cut into 12 bars.
  • 8 enjoy!
