Apri-carrot Bread

Ingredients
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 cup brown sugar
- 1/4 cup orange juice
- 1 tablespoon orange juice
- 2 egg whites
- 1 teaspoon almond extract
- 1 1/4 cups grated carrots
- 1/3 cup dried apricot, chopped
- 1/3 cup chopped walnuts (optional)
Recipe
- 1 combine flour, baking powder, baking soda, and brown sugar in large bowl. stir to mix well. add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened. fold in carrots, apricots, and walnuts (if you choose to use walnuts).
- 2 evenly spread in greased loaf pan. bake at 350 f for about 45 minutes or until toothpick inserted in center comes out clean. during baking, bread might form some opening crevices, allow for some heat ventilation inside bread. cool completely.
- 3 serve with a spread of peanut butter for some protein.
