Apri-carrot Bread

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup brown sugar
  • 1/4 cup orange juice
  • 1 tablespoon orange juice
  • 2 egg whites
  • 1 teaspoon almond extract
  • 1 1/4 cups grated carrots
  • 1/3 cup dried apricot, chopped
  • 1/3 cup chopped walnuts (optional)

Recipe

  • 1 combine flour, baking powder, baking soda, and brown sugar in large bowl. stir to mix well. add both 1/4 cup and 1 tablespoons orange juice, egg whites, and almond extract, stir until moistened. fold in carrots, apricots, and walnuts (if you choose to use walnuts).
  • 2 evenly spread in greased loaf pan. bake at 350 f for about 45 minutes or until toothpick inserted in center comes out clean. during baking, bread might form some opening crevices, allow for some heat ventilation inside bread. cool completely.
  • 3 serve with a spread of peanut butter for some protein.
