Caramel Bananas

Ingredients

- 1/2 cup sugar
- 1 cup light brown sugar
- 3 tablespoons evaporated milk
- 2 tablespoons butter
- 2 ounces rum
- 4 bananas, sliced
Recipe
- 1 in a small skillet, heat 1/2 cup sugar
- 2 1 cup light brown sugar
- 3 3 tbs. evaporated milk
- 4 2 tbs. butter.
- 5 cook until sugar caramelizes (i.e., melts and starts to turn brown).
- 6 stir in 2 oz. rum and cool.
- 7 arrange 1/2 banana per person in compote dish.
- 8 spoon 3 to 4 tbs. caramel sauce over bananas.
- 9 sprinkle 1 to 2 teaspoons chopped peanuts over caramel sauce.
