Ashton's Energy Bars

Ingredients

- 1 cup brown sugar
- 1 cup vegetable oil
- 2 eggs
- 2 cups rolled oats
- 1 1/2 cups unbleached all-purpose flour
- 1 cup raisins
- 1 cup peanuts (optional)
- 1 cup coconut (optional)
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Recipe
- 1 heat oven to 350 degrees.
- 2 spray a 11x17 baking pan with cooking spray.
- 3 mix brown sugar, oil, and eggs.
- 4 stir in other ingredients.
- 5 spread in prepared pan.
- 6 bake at 350 for about 16-25 minutes until center is set.
- 7 remove from oven and cool for 15 minutes before cutting into squares.
- 8 these freeze well.
- 9 my grandson got this recipe from one of his reading books at school. we left out the nuts and coconut because he doesn't like them but he really liked this snack. i cut back on the sugar to 3/4 cup and next time i will add 1 teaspoon vanilla because i like vanilla. we made it a week ago and he's already asking for it again. i guessed on the amount it made and the time to make as i didn't keep track of that.
