Ashton's Energy Bars

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 16
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 2 eggs
  • 2 cups rolled oats
  • 1 1/2 cups unbleached all-purpose flour
  • 1 cup raisins
  • 1 cup peanuts (optional)
  • 1 cup coconut (optional)
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Recipe

  • 1 heat oven to 350 degrees.
  • 2 spray a 11x17 baking pan with cooking spray.
  • 3 mix brown sugar, oil, and eggs.
  • 4 stir in other ingredients.
  • 5 spread in prepared pan.
  • 6 bake at 350 for about 16-25 minutes until center is set.
  • 7 remove from oven and cool for 15 minutes before cutting into squares.
  • 8 these freeze well.
  • 9 my grandson got this recipe from one of his reading books at school. we left out the nuts and coconut because he doesn't like them but he really liked this snack. i cut back on the sugar to 3/4 cup and next time i will add 1 teaspoon vanilla because i like vanilla. we made it a week ago and he's already asking for it again. i guessed on the amount it made and the time to make as i didn't keep track of that.
