Cream Of Peanut Soup

Ingredients
- Servings: 4
- 1 tablespoon butter
- 3 tablespoons peanut butter
- 1 teaspoon onion, minced
- 2 tablespoons flour
- 2 cups milk, scalded
- 1 cup chicken broth
- 1 tablespoon milk, for dissolving the flour.
Recipe
- 1 cook onions in butter and peanut butter for 5 minutes.
- 2 dissolve flour in 1 t milk.
- 3 add to pan and stir until smooth.
- 4 add scalded milk and chicken stock.
- 5 season to taste.
- 6 cook in double-boiler for 20 minutes.
- 7 optional: top with chopped peanuts.
