Chicken Salad With Tangy Lime Dressing

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 3 -4 skinless chicken breasts or 1 large cooked chicken
  • 1 red onion, sliced
  • 1 large red pepper, sliced
  • 1 (1 pint) container grape tomatoes, halved
  • 150 g mixed salad greens, washed
  • 2 teaspoons grated lime rind
  • 1/4 cup lime juice
  • 2 tablespoons peanut oil
  • 2 teaspoons fish sauce

Recipe

  • 1 grill or broil the chicken breasts until cooked and cut into bite sized pieces.
  • 2 if using a whole cooked chicken, take all the flesh off the chicken, discarding the skin and bones, and cut into bite sized pieces.
  • 3 combine chicken and all the salad ingredients in a bowl.
  • 4 make the dressing by combining all of the ingredients in a jar and shaking it well.
  • 5 just before serving add the dressing to the salad and toss together until salad is coated in dressing.
