A-1 Bombay Chicken

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • all-purpose flour
  • salt
  • pepper
  • 4 boneless chicken breasts
  • 1/8 cup cooking oil
  • 1 medium onion, sliced and quartered
  • 1/2 cup golden raisin
  • 1 1/3 cups basmati rice, raw,
  • 2 cups water
  • 1/2 cup flaked coconut
  • 1/2 cup salted peanuts, chopped
  • 4 teaspoons curry powder (or to taste)

Recipe

  • 1 prepare/measure all ingredients first.
  • 2 mix flour, salt and pepper and coat chicken.
  • 3 melt margaine in wok over medium high heat.
  • 4 brown chicken and set aside.
  • 5 reduce heat to medium.
  • 6 do not clean wok.
  • 7 cook onion in wok until tender but not brown.
  • 8 add raisins and heat until they puff.
  • 9 add curry and stir until mixed.
  • 10 stir in rice, coconut and peanuts.
  • 11 mix well.
  • 12 add water.
  • 13 spoon rice mixture into ungreased baking dish.
  • 14 place chicken on top - skin side up.
  • 15 bake at 350f about 45 min or until chicken is cooked.
  • 16 serve in baking dish.
