- 1 tablespoon vegetable oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 tablespoon peanut butter
- 2 tablespoons lemon juice
- 2 tablespoons fresh parsley, chopped
- 1 (400 g) can butter beans, drained
Recipe
- 1 heat the oil in a pan, add the onion and garlic and fry for 3-5 minutes until soft.
- 2 add the remaining ingredients to the onion mixture and mash everything together with a fork. spoon into a dish and chill before serving.
