Basic Oven Roasted Peanuts

Total Time: 23 mins Preparation Time: 3 mins Cook Time: 20 mins

Ingredients

  • 2 cups raw peanuts
  • 1 teaspoon salt (optional)

Recipe

  • 1 place raw peanuts, in shell or shelled, one layer deep in a shallow baking pan. sprinkle salt over.
  • 2 roast in a 350 degree f oven; 15 to 20 minutes for shelled and 20 to 25 minutes for in shell peanuts.
  • 3 remove from heat just short of doneness desired, as peanuts continue to cook as they cool.

Crackling Rice Paper-wrapped Fish

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 450 g fish fillets, skiined and boned (blue-eye cod or snapper)
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 teaspoons madras curry powder
  • 4 large dried rice paper, rounds (banh trang)
  • 8 coriander leaves
  • 3 tablespoons chives, chopped
  • 2 tablespoons peanut oil

Recipe

  • 1 divide fish into 4 equal portions.
  • 2 combine salt, pepper, and curry powder.
  • 3 sprinkle over fish.
  • 4 fill bowl with warm water. dipping rice paper rounds until just soft.
  • 5 place 2 pieces coriander in centre of paper, top with fish, sprinkle over chives.
  • 6 fold the edge of rice paper closest to you over the fish. fold in the sides and lastly tuck the furthest side over.
  • 7 heat oil in frying pan.
  • 8 fry wrap seam side down for 3- 5 minutes, then turn and fry for a further 3 - 5 minutes until golden brown.
  • 9 repeat for all and serve.

Chewy Granola Bars

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 (10 1/2 ounce) package large marshmallows
  • 2/3 cup crunchy peanut butter
  • 1/2 cup butter, cubed
  • 1/4 cup corn syrup
  • 2 teaspoons vanilla extract
  • 4 cups oats
  • 1 cup crisp rice cereal (rice krispies)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup flaked coconut
  • 1/2 cup sunflower seeds
  • 1/2 cup peanuts, chopped
  • 1/2 cup raisins
  • 2 tablespoons wheat germ
  • 2 tablespoons sesame seeds

Recipe

  • 1 in a large bowl, mix together the oats, rice cereal, chocolate chips, coconut, sunflowers, peanuts, raisins, wheat germ, and sesame seeds.
  • 2 in a large microwave-safe bowl, combine the marshmallows, peanut butter, butter, corn syrup and vanilla.
  • 3 microwave the marshmallow mixture at 70% power for 2-3 minutes, stirring often until well-blended.
  • 4 quicky stir the dry ingredients in to the marshmallow mixture. you'll have to work quickly as the mix will get gooey fast.
  • 5 spread into a greased 13-in. x 9-in. x 2-in. baking pan. to flatten the granola bars, i spray the bottom of a second baking pan with cooking spray, nest this second pan on top of the pan with the mix and press down hard.
  • 6 bake at 350 degrees f. for 15-20 minutes.
  • 7 cool and cut into 24 bars.

Chocolate Energy Bites

Ingredients

  • Servings: 24
  • 1 cup oatmeal
  • 1/2 cup peanut butter
  • 1/3 cup honey
  • 1/2 cup ground flax seeds
  • 1/2 cup mini chocolate chip (or mini m&m)
  • 1/4 cup cocoa
  • 1 teaspoon vanilla

Recipe

  • 1 mix everything above in a medium bowl until thoroughly incorporated. let chill in the refrigerator for half an hour. once chilled, roll into balls and enjoy! i like to use the mini muffin cups.

Di's Chocolatey Peanut Brittle

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 1/4 cup hershey's cocoa
  • 1 teaspoon baking soda
  • 1 tablespoon butter
  • 1 cup sugar
  • 1/2 cup light corn syrup
  • 1/4 cup whipping cream
  • 1 1/4 cups salted peanuts or 1 1/4 cups cashews or 1 1/4 cups pecans or 1 1/4 cups walnuts or 1 1/4 cups macadamia nuts

Recipe

  • 1 lightly butter a cookie sheet. set aside.
  • 2 in a small bowl stir together cocoa and baking soda. add butter and set aside.
  • 3 in a heavy 2 quart saucepan stir together sugar, corn syrup and whipping cream. cook over medium heat, stirring constantly until sugar is dissolved.
  • 4 stir in the nuts you are using.
  • 5 continue cooking, stirring frequently, until mixture reaches 300°f on candy thermometer, or until syrup, when dropped into very cold water, separates into threads which are hard and brittle. (bulb of candy thermometer should not rest on bottom of saucepan.).
  • 6 remove from heat. stir in cocoa mixture.
  • 7 immediately pour onto a prepared cookie sheet.
  • 8 with tongs or wooden spoons, quickly spread and pull into 1/4" thickness.
  • 9 place cookie sheet on wire rack, and cool completely.
  • 10 break into pieces, and store in a tightly covered container.

Berna's Bars

Ingredients

  • 3 weetabix, crushed up
  • 2 cups rolled oats
  • 1 1/2 cups nuts (cashews ,brazils, hazelnuts, walnuts, any combination )
  • 1 cup rice bubbles (rice crispies )
  • 1 cup lsa (ground linseed, sesame seed & almond mix )
  • 1/2 cup raisins
  • 1/2 cup craisins (dried sweetened cranberries )
  • 1/2 cup dates, chopped roughly
  • 1/2 cup skim milk powder
  • 125 g butter
  • 1/2 cup crunchy peanut butter
  • 1/2 cup honey
  • 1/2 cup soft brown sugar

Recipe

  • 1 grease & line a 15"x10" lamington/slice tin- let the paper overhang the edges, it makes it easier to get out of the pan without breaking.
  • 2 put the first 9 ingredients in a large bowl, mix well.
  • 3 put the next 4 ingredients into a saucepan and heat gently until melted, stir well until blended then boil for a minute.
  • 4 add the hot liquid to the dry ingredients and mix very well until everything is coated then tip into lined tin, spread evenly & press down very firmly smoothing the topas you press.
  • 5 refrigerate until firm enough to cut into 22 bars. ( i usually freeze it for 1/2 an hour & then tip it out onto a board, mark it up & then cut, so that i don't damage the tin.
  • 6 prep time is weighing/measuring time.
  • 7 cooking time is cooling/freezing time.

Avocado Wontons

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 4 large avocados (cut into 3/4 inch pieces)
  • 1 tablespoon garlic powder
  • 1/4 teaspoon dry dried chipotle powder
  • 1 lime, juice of
  • 1 tablespoon fresh cilantro (chopped fine, no stems)
  • kosher salt and black pepper
  • 1 egg (whisk until thin)
  • 48 wonton wrappers
  • peanut oil (for frying)

Recipe

  • 1 toss avocados with garlic, chipotle, lime juice, cilantro, kosher salt and pepper.
  • 2 brush wonton wrappers edges with egg wash and fold diagonally.
  • 3 press to seal.
  • 4 fry in 350°f peanut oil until golden brown.

Chewy Granola Bars (peanut-free)

Ingredients

  • 1/4 cup butter
  • 1/4 cup honey
  • 1/3 cup packed brown sugar
  • 2 cups quick-cooking oats (not rolled oats!)
  • 1 cup crispy rice cereal
  • 1/2 teaspoon vanilla
  • 2 tablespoons mini chocolate chips

Recipe

  • 1 in a large bowl, stir oats and rice cereal together; set aside.
  • 2 in a small pot, melt butter, honey and brown sugar together over medium high heat until it comes to a bubble.
  • 3 reduce the heat and cook 2 minutes.
  • 4 pour in vanilla and stir.
  • 5 pour over dry ingredients and mix well to moisten all ingredients.
  • 6 pour into lightly greased small jelly roll pan {about 12x8x1} and press out to be about 3/4 inch in thickness. {if your pan isn't small enough, pack the mixture into one side. you really want to press them down so they stick together.}
  • 7 sprinkle with mini chocolate chips and press down lightly. cool on a countertop to room temperature for two hours or until the chocolate chips are set before cutting into bars.

Caramel Apple Parfait Crunch

  • 1 (8 ounce) package neufchatel cheese, softened
  • 3/4 cup firmly packed dark brown sugar, divided
  • 1 tablespoon milk
  • 3/4 cup dry roasted peanuts, finely chopped
  • 1/2 cup granola cereal, nuggets
  • 3 tablespoons margarine, melted
  • 4 medium red apples, chopped
  • reddi-wip topping

Recipe

  • 1 mix neufchatel cheese, 1/2 cup brown sugar and milk in medium bowl until well blended.
  • 2 combine peanuts, cereal and remaining 1/4 cup brown sugar in small bowl. stir in margarine until well blended.
  • 3 spoon half of the apples into 6 (8-ounce) parfait glasses; cover with half each of the neufchatel mixture and peanut mixture. top each reddi-wip. repeat all laye.

Basic Oriental Fried Rice - Stephen Yan

  • 6 cups cooked rice, cold
  • 4 tablespoons peanut oil, divided
  • 2 large eggs, beaten with
  • 1 dash salt
  • 1/2 teaspoon salt
  • 2 tablespoons dark soy sauce
  • 1 teaspoon wine
  • 2 green onions, stalks chopped fine

Recipe

  • 1 into a hot wok, add 1 tablespoon of peanut oil.
  • 2 when oil is hot, gently pour egg into wok and cook with medium-high heat for 2 minutes.
  • 3 turn over to cook the other side of the egg.
  • 4 cook for another 2 minutes and remove from wok to a cutting board and shred egg into slivers.

Caramel Apple Ice Cream (ice Cream Machine)

  • 1 cup whipping cream
  • 2/3 cup half-and-half
  • 2/3 cup sugar
  • 2 teaspoons vanilla
  • 1 tablespoon lemon juice
  • 3 tablespoons caramel sundae syrup (i use smuckers because it is thin)
  • 10 ounces apple pie filling (diced smaller than a chocolate chip)
  • 1/2 cup roasted peanuts (chopped)
  • 1/8 teaspoon salt

Recipe

  • 1 combine cream, half/half, sugar, vanilla and lemon juice in a bowl and whisk. add caramel sauce to mixture and mix well.
  • 2 in a separate bowl, combine chopped apples, peanuts and salt and mix well.
  • 3 place cream mixture in electric ice cream machine and turn on for 25 mintues.
  • 4 gradually add apple/nut mixture at the end of freezing for an additional 10 minutes.
  • 5 transfer to airtight container and freeze for 2 hours before serving.

Crackerjack Shrimp Or Chicken

Ingredients

  • Servings: 4
  • 1/2 teaspoon salt
  • 1 egg , beaten
  • 1 tablespoon cornstarch
  • 2 teaspoons peanut oil or 2 teaspoons vegetable oil
  • 1 tablespoon sherry wine
  • 1 lb boneless skinless chicken breasts, diced or 1 lb shelled and deveined shrimp
  • 1 cup cornstarch
  • 4 tablespoons ketchup
  • 1/2 cup chicken broth
  • 2 tablespoons sugar
  • 1/2 cup sweet chili sauce (like mae ploy)
  • 6 garlic cloves, finely minced
  • 4 teaspoons grated fresh ginger
  • 1/2 cup peanut oil, canola oil or 1/2 cup vegetable oil

Recipe

  • 1 in a large bowl, whisk together all of the ingredients for the shrimp marinade; set aside.
  • 2 rinse the cleaned shrimp or chicken pieces under cold water then lay out on paper towels and pat until completely dry.
  • 3 add shrimp or chicken to marinade and cover the bowl. refrigerate for 30 minutes. while marinating, prepare the sauce by whisking together all of the sauce ingredients in a large bowl. set the prepared sauce aside.
  • 4 place the 1 cup of cornstarch in a large bowl. add the marinated shrimp or chicken to the cornstarch, tossing to evenly coat. transfer the coated shrimp to a colander and shake off any excess cornstarch.
  • 5 place a large, deep saute pan over medium-high heat. let it sit for 2 to 3 minutes until it is very hot.
  • 6 add the peanut oil. it should slide very easily across the pan but not smoke.
  • 7 add half of the prepared shrimp or chicken to the pan, spreading apart so as to keep pieces from touching. allow them to cook 2 minutes, then flip them once and cook on the second side for 1 additional minute (for the shrimp) or just until they turn pink and are fully cooked throughout. the chicken cubes may take a couple of minutes longer.
  • 8 remove with a slotted spoon and transfer to a plate lined with paper towels. repeat the cooking process with the second half, adding more oil to the pan if necessary.
  • 9 drain the excess oil from the pan and then allow the pan to cool before returning it to the stove (this is very important).
  • 10 return the pan to the stove, placing it over medium heat. add the prepared sauce and bring it to a boil.
  • 11 add the cooked shrimp or chicken to the sauce and toss to evenly coat. serve hot over rice.

Chicken In Spicy Peanut Sauce

Ingredients

  • Servings: 6
  • 1 1/2 lbs boneless skinless chicken breasts
  • 2 tablespoons vegetable oil
  • 10 3/4 ounces low-fat cream of chicken soup
  • 3 tablespoons reduced-fat crunchy peanut butter
  • 1/3 cup water
  • 2 green onions, sliced
  • 1 teaspoon chili powder
  • 1/8 teaspoon ground red pepper

Recipe

  • 1 place chicken breasts between 2 sheets of plastic wrap.
  • 2 with a meat mallet , pound to a 1/4-inch thickness.
  • 3 in a 10-inch skillet over medium heat, in hot oil, cook chickem 10 minutes or until browned on both sides.
  • 4 remove chicken from skillet. spoon off fat.
  • 5 add soup, peanut butter, water, green onions, chili powder and red pepper to skillet; stir until smooth.
  • 6 over medium heat, heat to boiling. reduce heat to low.
  • 7 return chicken to skillet.
  • 8 cover and simmer 5 minutes or until chicken is tender and juices run clear.

Cucumber-papaya Salad

Ingredients

  • Servings: 4
  • 1 large cucumber, peeled,seeded and thinly sliced (about 1 1/2 cups)
  • 1/2 teaspoon salt
  • 1/4 cup rice wine vinegar
  • 4 teaspoons sugar
  • 1 tablespoon peanut oil
  • 1 teaspoon chili paste
  • 2 teaspoons minced fresh ginger
  • 1 large papaya, peeled and cut into 1/2 inch dice (about 1 1/2 cups)
  • 1/4 cup fresh cilantro, chopped
  • 6 lettuce leaves

Recipe

  • 1 sprinkle cucumber with salt and let drain in a colander for 20 minutes.
  • 2 rinse and pat dry.
  • 3 in a bowl, whisk together the vinegar, sugar, oil, chiles and ginger.
  • 4 add the cucumber, papaya and cilantro and toss.
  • 5 line a serving platter or 4 indivicual plates with lettuce leaves and top each with about 1/2 cup salad.

  • 2 stir in remaining ingredients.

  • 2 stir in the chopped apples and peanuts (if using) until well combined.
  • 3 let chill for a couple of hours before serving.

Cracker Jack - Copycat

Ingredients

  • 10 cups popped popcorn
  • 1 1/2 cups cocktail peanuts
  • 1/4 teaspoon baking soda
  • 1 cup firmly packed light brown sugar
  • 1/4 cup dark corn syrup
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon vanilla

Recipe

  • 1 mix popcorn and peanuts in a large bowl or roasting pan. keep warm in a 250°f oven.
  • 2 melt butter in a 2 quart saucepan. stir in sugar, corn syrup and salt. bring to a rolling boil on medium heat, stirring constantly. boil without stirring for 5 minutes. remove from heat and stir in soda and vanilla.
  • 3 quickly pour over warm popcorn while tossing until well coated. spread in a shallow baking pan or roasting pan.
  • 4 bake at 250°f for 45 minutes. stir every 15 minutes. make sure every piece of popcorn has been moved around on the bottom.
  • 5 remove from oven and turn out onto foil to let cool.
  • 6 store in a tightly covered container.

Chocolate Easter Eggs

Ingredients

  • 3/4 cup chunky peanut butter
  • 1/4 cup butter, softened
  • 1 cup flaked coconut
  • 1/2 cup finely chopped walnuts
  • 1 1/2-2 cups powdered sugar, divided
  • 12 ounces semi-sweet chocolate chips
  • 2 tablespoons shortening

Recipe

  • 1 in a mixing bowl cream peanut butter and butter until well mixed.
  • 2 fold in coconut, nuts and 1 cup sugar,mix well.
  • 3 sprinkle some of the remaining sugar on a board.
  • 4 turn peanut butter mixture onto board,knead in enough of the remaining sugar until mixture holds its shape when formed.
  • 5 shape into small egg shaped pieces.
  • 6 cover and chill for one hour.
  • 7 in a double over hot water, melt chocolate chips and shortening.
  • 8 stir until smooth.
  • 9 dip eggs; place on wax paper to harden.
  • 10 chill.

  • 2 tablespoons cider vinegar
  • 8 ounces crushed pineapple, drained
  • 6 large granny smith apples
  • 2 cups peanuts

Recipe

  • 1 drain the pineapple.
  • 2 in a large bowl, combine the caramel sauce, the cider vinegar and the crushed pineapple.
  • 3 peel the apples, one at a time, and cut into 1/2 inch cubes. stir the apple into the sauce to prevent browning. repeat until all the apples have been added.
  • 4 combine the remaining ingredients, blending well.
  • 5 refrigerate 2-4 hours.

Chicken In Peanut Sauce (nikatse Nkwa)

Ingredients

  • Servings: 4
  • 1 (3 lb) roasting chickens, cut into pieces
  • water, enough to cover chicken
  • 2 teaspoons salt
  • 4 bay leaves
  • 6 medium tomatoes, peeled and quartered
  • 1 (6 ounce) can tomato paste
  • 3 onions, cut into quarters
  • 1 cup smooth peanut butter
  • salt, to taste
  • black pepper, to taste
  • cooked rice

Recipe

  • 1 in a large saucepan, cover chicken with water. add 2 teaspoons salt and bay leaves. bring to a boil; reduce heat and simmer 30 to 45 minutes or until tender.
  • 2 in a blender, puree tomatoes, tomato paste and onions. remove cooked chicken from pan; keep warm. strain cooking liquid, discarding bay leaves.
  • 3 pour 2-1/2 cups strained cooking liquid back into pan. add pureed mixture; simmer 10 minutes. remove from heat; whisk in peanut butter, 1 tablespoon at a time. cover and simmer 10 minutes longer. season with salt and pepper.
  • 4 place chicken in a large bowl; pour sauce over chicken. serve with cooked rice.

Chili-ginger Infused Oil

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup corn or 1 cup peanut oil
  • 1 cup japanese sesame oil
  • 1/2 cup scallion, green & , cut in rings
  • 15 quarter-sized slices ginger, smashed
  • 2 tablespoons peppercorns (szechwan brown preferred)
  • 2/3 cup chili flakes, dried red
  • 2 teaspoons salt (kosher is good)

Recipe

  • 1 combine all ingredients in a heavy, non aluminum 1 1/2 quart saucepan.
  • 2 rest a deep-fry thermometer on the rim of the pot.
  • 3 over moderately low heat, bring the mixture to a bubbly 225 degrees, stirring occasionally (if you don't have a thermometer, don't let this boil!).
  • 4 let simmer for 15 minutes, checking to make sure the temperature does not rise.
  • 5 remove from the heat and let stand until cool or overnight.
  • 6 strain the oil without pressing the solids; then, discard the solids.
  • 7 store the oil in an completely clean glass jar at cool room temperature.

Cracker Jack Cookies

Ingredients

  • 1 cup sugar
  • 1 cup corn syrup
  • 1 1/2 cups peanut butter (plain or crunchy)
  • 5 cups kellogg's special k cereal

Recipe

  • 1 mix and bring to boil sugar and corn syrup.
  • 2 add peanut butter.
  • 3 then pour over kellogg's special k cereal.
  • 4 drop by spoonfuls on waxed paper.
  • 5 cool.

  • 1 prepare a 9x13 pan with non-stick spray.
  • 2 in a large bowl, mix all dry ingredients so they are ready for the hot sugar mixture.
  • 3 in a sauce pan, make sugar mixture. combine brown sugar, corn syrup and optional molasses; bring to a full boil and allow to boil 1 minute. turn down heat and add peanut butter and vanilla, stirring quickly until smooth.
  • 4 work quickly - pour the hot sugar mixture over dry ingredients and use two wooden spoons to thoroughly combine ingredients. stir in chips last so they don't melt in the hot mixture.
  • 5 press mixture very firmly into prepared pan. keep pressing down until your bars are dense in order to keep them from crumbling later when you cut them.
  • 6 when cool, use a sharp knife to cut into 18 bars (1 cut lengthwise and then 9 cuts across).

Burmese Fried Shrimp

  • 3/4 cup hot water

  • 1 combine salt and pepper and rub chicken pieces with mixture.
  • 2 cut chicken into small, bite-size pieces.
  • 3 in large fry pan, melt butter.
  • 4 add chicken.
  • 5 brown chicken well, and then cover pan and cook on low to medium for 40 minutes, stirring as needed.
  • 6 combine flour and peanuts and add to chicken, being sure to stir chicken to coat all sides.
  • 7 add carrots, tumeric and the hot water.
  • 8 simmer for about 10 minutes or until sauce thickens to your preference.
  • 9 serve over steamed rice or cooked rice noodles.

  • 3 pour honey mixture over dry ingredients, mixing until thoroughly coated.
  • 4 pack firmly into pan and bake at 350° for 15 to 20 minutes.

  • 6 note: i have substituted chocolate chips for peanuts with good results.

  • 1 cup margarine, softened
  • 1 cup brown sugar
  • 1 cup sugar
  • 1 medium egg
  • 2 teaspoons vanilla
  • 3 cups flour (sifted or fluffed before measuring)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup peanuts (optional)

Recipe

  • 1 in a large bowl, combine the margarine, brown sugar and sugar. beat the mixture until it is smooth and fluffy. stir in the eggs and vanilla. beat again, making a smooth, satiny mixture. add the flour, baking powder and salt. mix with a big spoon until the batter is thick and smooth. stir in the peanuts, if using. turn the batter into a well oiled 9-13-inch rectangular pan. bake at 350f for 25 to 30 minutes. the bars will rise up and then fall slightly. remove fom the oven when done. allow the bars to cool before cutting into 24 or 32 pieces. if desired, you may frost these with chocolate or vanilla frosting. these are a pleasant change from brownies.
  • 2 to fluff up your flour before measuring, just stir it with a spoon to incorporate some air. if you can't sift or stir your flour, then reduce the amount called for to about 2 1/2 cups.

Cracker Jack - Copycat

  • 1/2 tablespoon jiafan rice wine

  • 1 blend starch and flour together in a bowl to yield a mixture for coating.
  • 2 stir all the marinade ingredients in a bowl.
  • 3 rinse and pat the chicken dry.
  • 4 cut into inch-sized pieces and pour in prepared marinade.
  • 5 stir and let marinate for 1 hour until chicken dices fully absorb the sauce.
  • 6 heat up a pan with oil until hot.
  • 7 coat the chicken with flour mixture and deep fry them until golden brown and crispy.
  • 8 drain and serve with a dish of juice of fermented tofu or peanut sauce.

Caramel Apple Dessert Pizza

  • 2 tablespoons shortening

Recipe

  • 1 in a mixing bowl, cream peanut butter and butter until mixed well.
  • 2 fold in coconut, nuts and 1 cup confectioner's sugar; mix well.
  • 3 sprinkle some of the remaining sugar on a board.
  • 4 turn peanut butter mixture onto board; knead in enough of the remaining confectioners' sugar until mixture holds its shape when formed.
  • 5 shape into small egg-shaped pieces.
  • 6 cover and chill for 1 hour.
  • 7 in a double boiler over hot water, melt chocolate chips and shortening, stirring until smooth.

Benihana Seafood Tempura

  • 2 large eggs
  • 2 cups rice flour
  • 1 cup ice water
  • 8 tiger shrimp, shelled, deveined & butterflied
  • 6 scallops
  • 2 medium squid
  • 1 small potato
  • 8 shiitake mushrooms
  • 1 green pepper
  • 8 pieces nori, cut into 1 x 3 inch sheets
  • 1 carrot, shredded
  • 4 cups peanut oil

Recipe

  • 1 soak the shiitake mushrooms in a bowl of warm water for 15 minutes. remove stems, then dry the mushroom caps with paper toweling. slice each cap with an 'x'. set the mushrooms aside.
  • 2 cut the squid into either 1/2-inch rings or 1 x 3-inch sheets. (if the latter, lattice-cut the squid meat to prevent curling in the fryer.) dry and set aside.
  • 3 peel the carrot and shred with a grater. set aside. cut the green pepper into 1/4-inch slices. remove seeds from inside the rings. set aside. slice the potato into 1/4-inch slices. set aside.
  • 4 in a large mixing bowl, break the eggs into 1 cup ice water. whisk quickly but not thoroughly. add the rice flour all at once; mix until the batter is loosely combined. (if overmixed, the batter will be too heavy when deep-fried.).
  • 5 heat 4 cups of peanut oil on high in a wok or deep-fryer until almost smoking. make the tempura in small batches. drain briefly on rack or paper towels, then serve immediately with warmed tempura dipping sauce mixed with grated ginger, served in individual bowls. (tempura does not fry to a 'golden brown'. it will be almost a pasty when done.).
  • 6 note - the shredded carrots are most easily deep-fried by spooning an amount into the batter and then sliding the battered carrots into the deep-fryer.

  • 4 garlic cloves, smashed and peeled

  • 1/3 cup toasted sesame oil
  • 1/3 cup chinese black beans, coarsely chopped (optional)
  • 3 oranges, zest of, the freshly grated large (optional)
  • 1 tablespoon szechuan peppercorns (optional)

Recipe

  • 1 in a large pot, combine pepper flakes, garlic, scallions, ginger, and corn or peanut oil; heat, over medium low, until bubbly (225-250 degrees f); let simmer 15 minutes then allow to cool.
  • 2 store in a tightly covered glass or plastic container at room temperature.
  • 3 if using any (or all) of the variations, add them before cooking.

Chocolate Frosted Peanut Butter Crispy Rice Cereal Bars

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 30
  • 1/2 cup light corn syrup
  • 1/2 cup sugar
  • 1/2 cup margarine or 1/2 cup butter, softened
  • 3/4 cup peanut butter
  • 1 teaspoon vanilla
  • 0.5 (16 ounce) package mini marshmallows
  • 5 1/2 cups crispy rice cereal
  • 1/4 cup chopped peanuts (optional)
  • 2 cups semisweet chocolate morsels
  • 2 tablespoons shortening

Recipe

  • 1 pour the rice cereal and chopped peanuts (if using) in a large bowl; set aside.
  • 2 in a heavy-bottomed saucepan combine the light corn syrup and sugar; bring to a boil; continue to boil for 1 minute.
  • 3 reduce heat to low and stir in butter or margarine, peanut butter and vanilla until melted and smooth.
  • 4 add in mini marshmallows and stir until blended.
  • 5 pour the marshmallow mixture into the rice cereal and stir with a wooden spoon until well combined.
  • 6 press the mixture into an greased 11 x 7-inch baking pan, flatten with the back of a buttered spoon.
  • 7 in a microwave-safe bowl microwave the chocolate chips with shortening on high until melted, removing once to stir.
  • 8 immediately spread the hot chocolate mixture evenly over the bars; chill to harden the chocolate.
  • 9 cut into desired size bars.

Cucumber, Bean Sprout And Red Onion Salad

  • 1/4 cup finely chopped fresh cilantro, including the stems
  • 2 tablespoons peanut oil or 2 tablespoons canola oil
  • 1 teaspoon melted ghee
  • 1 teaspoon cumin seed
  • 1/2 small onion, finely chopped
  • 1 tablespoon peeled minced fresh ginger
  • 1 tablespoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground paprika
  • fresh ground black pepper

Recipe

  • 1 place the mung beans, 3 1/2 cups water, green chile peppers, turmeric, and salt in a saucepan; bring to a boil over high heat; decrease heat to medium and cook beans, uncovered, stirring occasionally and watching carefully that it doesn't boil over, about 10 minutes.
  • 2 decrease heat to low, add in the remaining water, if needed, and simmer until the beans are soft and creamy, about 15 minutes.

  • 1 cut wings intp three pieces (save tips for making stock).
  • 2 heat oil in wok and fry the larger joints on high heat for 3-4 minutes or until browned.
  • 3 add soy, honey, wine, garlic and ginger, stir well.
  • 4 reduce heat to low, cover and simmer for 30 minutes or until the wings are tender.
  • 5 towards the end watch the wings carefully, stir frequently to make sure the glaze does not burn.
  • 6 serve warm or at room temperature.
