Chocolate Easter Eggs

Total Time: 42 mins Preparation Time: 30 mins Cook Time: 12 mins

Ingredients

  • Servings: 10
  • 2 (3 1/2 ounce) packages cook and serve chocolate pudding mix
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 5 -6 cups confectioners' sugar
  • 2 cups peanut butter
  • 4 cups semi-sweet chocolate chips (24 oz)
  • 2 teaspoons shortening
  • assorted decorating icings and small decorative candies

Recipe

  • 1 combine pudding mixes, butter and milk in a saucepan.
  • 2 cook and stir over medium heat until the mixture comes to a boil.
  • 3 cook while stirring for 2 more minutes, or until thickened.
  • 4 remove from heat, stir in the sugar and peanut butter.
  • 5 cool slightly.
  • 6 shape 1/2 cupfuls of the mixture into egg shapes.
  • 7 place on a waxed paper lined bake sheet, and refrigerate until set.
  • 8 in the microwave or a saucepan, melt the chocolate chips and the shortening, stirring until smooth.
  • 9 dip the eggs in the chocolate, allwowing the excess to drip off.
  • 10 put back on waxed paper to dry.
  • 11 decorate as desired with icings and candies.
