Beef With Bean Sprouts

Ingredients
- 10 ounces beef, etc., sliced across the grain (sirloin, flank) 
- 2 tablespoons light soy sauce 
- 1 tablespoon tapioca starch or 1 tablespoon cornstarch 
- 1 tablespoon peanut oil 
- 1 lb bean sprouts 
- 1/4 cup carrot, slivered 
- 1/4 cup celery, sliced 
- 1 small green pepper, cubed 
- 1/2 teaspoon minced ginger 
- 1/2 teaspoon minced garlic 
- 1 stalk green onion, cut to 1-inch lengths 
- 1 teaspoon sugar 
- 1 tablespoon light soy sauce 
- 1 tablespoon oyster sauce 
- 1/2 teaspoon salt 
- 1 teaspoon rice wine or 1 teaspoon dry sherry 
-  sesame seed oil (drops to taste) 
- 1 tablespoon tapioca starch or 1 tablespoon cornstarch 
- 1/4 cup water 
Recipe
- 1 marinate beef with 2 tablespoons light soy sauce and 1 tablespoons tapioca starch or cornstarch for 5 to 10 minutes. 
- 2 heat wok. add 1 tablespoons peanut oil. add ginger, garlic and onion and stir fry for half a minute. add beef and stir fry until meat changes colour. remove and set aside. 
- 3 add all vegetables and stir fry until tender crisp.
