Chow Mein Ala Pencil Boy

Ingredients
- Servings: 4
- 2 garlic cloves, chopped
- 1 small onion, thinly sliced
- 4 ounces chicken breasts, chopped
- 2 cups cabbage, finely chopped
- 1 medium carrot, shredded
- 2/3 cup dried rice noodles, thin ones broken into pieces
- 10 ounces fried chinese noodles, package calls them chinese steam fried
- 4 ounces bean sprouts (optional)
- 2 tablespoons light soy sauce
- 2 tablespoons oyster sauce
- 1 1/2 cups chicken stock
- 2 tablespoons peanut oil
Recipe
- 1 heat your wok on high heat.
- 2 add peanut oil, heat & then add chicken, stirfry till it changes colour.
- 3 add garlic & onion, stirfry for a couple of minutes.
- 4 add cabbage & carrot, stirfry for about 3 minutes.
- 5 add stock, heat for a minute then add rice noodles.
- 6 add steam fried noodles.
- 7 add soy sauce & oyster sauce, clap the lid on & cook till noodles are tender.
- 8 add sprouts if you have 'em, but you don't really need 'em.
- 9 that's it, easy huh?.
- 10 easily made vegetarian as we have done on occasion. just substitute veg stock for chicken & don't add any chicken, it doesn't lose anything without them.
- 11 feeds the two of us for dinner if this is all we have otherwise with other things, it will feed 4.
