Chow Mein Ala Pencil Boy

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 garlic cloves, chopped
  • 1 small onion, thinly sliced
  • 4 ounces chicken breasts, chopped
  • 2 cups cabbage, finely chopped
  • 1 medium carrot, shredded
  • 2/3 cup dried rice noodles, thin ones broken into pieces
  • 10 ounces fried chinese noodles, package calls them chinese steam fried
  • 4 ounces bean sprouts (optional)
  • 2 tablespoons light soy sauce
  • 2 tablespoons oyster sauce
  • 1 1/2 cups chicken stock
  • 2 tablespoons peanut oil

Recipe

  • 1 heat your wok on high heat.
  • 2 add peanut oil, heat & then add chicken, stirfry till it changes colour.
  • 3 add garlic & onion, stirfry for a couple of minutes.
  • 4 add cabbage & carrot, stirfry for about 3 minutes.
  • 5 add stock, heat for a minute then add rice noodles.
  • 6 add steam fried noodles.
  • 7 add soy sauce & oyster sauce, clap the lid on & cook till noodles are tender.
  • 8 add sprouts if you have 'em, but you don't really need 'em.
  • 9 that's it, easy huh?.
  • 10 easily made vegetarian as we have done on occasion. just substitute veg stock for chicken & don't add any chicken, it doesn't lose anything without them.
  • 11 feeds the two of us for dinner if this is all we have otherwise with other things, it will feed 4.
