Autumn Yam And Peanut Soup

Ingredients

  • Servings: 4
  • 1 teaspoon oil
  • 1 cup onion, chopped
  • 1 teaspoon ground cumin
  • 1 lb yam, peeled and cut into chunks
  • 1 large green apple, peeled and cut into chunks
  • 1 (14 1/2 ounce) can chicken broth
  • 1 (6 ounce) can apple juice
  • 1/8 teaspoon cinnamon
  • salt and pepper
  • 1/2 cup creamy peanut butter

Recipe

  • 1 in large saucepan over medium heat, heat oil. add onions and cumin. cook until onion is translucent, stirring occasionally.
  • 2 add yams, apple, broth, apple juice, cinnamon, and salt and pepper to taste. cover and bring to a boil. reduce heat and simmer for 20 minutes, or until apples are tender. add peanut butter. stir until melted.
  • 3 ladle into blender in batches if nessesary and blender until smooth. return to pan. heat through.
  • 4 to serve, ladle into bowls. garnish with sour cream, chopped peanuts, and apple slices, if desired.
