Chicken Lemon Grass Curry

Ingredients

- 2 stalks lemongrass, smashed and cut into 1 inch pieces
- 2 tablespoons oil
- 1 small onion, thinly sliced
- 2 teaspoons garlic, minced
- 1 1/2 lbs chicken, boneless skinless and cut into strips
- 1/2 teaspoon black pepper
- 2 tablespoons fish sauce
- 1 pinch sugar
- 1 teaspoon rude curry paste
- 1 chile, hot red minced
- 2 tablespoons chicken broth (or water)
- 1/2 cup coconut milk
- 2 tablespoons peanuts, chopped
- 1/4 cup cilantro, chopped
Recipe
- 1 in a hot wok over high heat add oil, onions and garlic. stir fry 1 minute.
- 2 add chicken, pepper, lemon grass, fish sauce, sugar, curry and chili. stir fry 3 minutes or until fragrant.
- 3 add broth and simmer about 5 minutes.
- 4 add coconut mils and simmer 3 minutes until slightly thickened and creamy.
- 5 garnish with peanuts and cilantro. serve with rice.
