Chicken Lemon Grass Curry

Ingredients

  • Servings: 4
  • 2 stalks lemongrass, smashed and cut into 1 inch pieces
  • 2 tablespoons oil
  • 1 small onion, thinly sliced
  • 2 teaspoons garlic, minced
  • 1 1/2 lbs chicken, boneless skinless and cut into strips
  • 1/2 teaspoon black pepper
  • 2 tablespoons fish sauce
  • 1 pinch sugar
  • 1 teaspoon rude curry paste
  • 1 chile, hot red minced
  • 2 tablespoons chicken broth (or water)
  • 1/2 cup coconut milk
  • 2 tablespoons peanuts, chopped
  • 1/4 cup cilantro, chopped

Recipe

  • 1 in a hot wok over high heat add oil, onions and garlic. stir fry 1 minute.
  • 2 add chicken, pepper, lemon grass, fish sauce, sugar, curry and chili. stir fry 3 minutes or until fragrant.
  • 3 add broth and simmer about 5 minutes.
  • 4 add coconut mils and simmer 3 minutes until slightly thickened and creamy.
  • 5 garnish with peanuts and cilantro. serve with rice.
