African Chicken

Ingredients
- 4 lbs chicken pieces
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1 teaspoon curry powder
- 1 large onion (peeled and sliced)
- 1 large sweet red pepper (cut into strips)
- 1 large tomato (chopped)
- 1 1/2 cups uncooked rice
- 1/4 cup crunchy peanut butter
- 1/4 cup warm water
Recipe
- 1 brown chicken in vegetable oil in large frying pan; set aside.
- 2 remove all but 2 tablespoons of oil and drippings in pan.
- 3 stir in curry powder and salt, onion, red pepper, tomato and rice.
- 4 cover and simmer 5 minutes; return chicken to pan.
- 5 cover; simmer until chicken is tender.
- 6 remove chicken to large platter.
- 7 blend peanut butter and water; stir into vegetables.
- 8 heat to boiling.
- 9 spoon over chicken.
