Chocolate Spanish Peanut Cookies

Ingredients

- 2/3 cup softened unsalted butter
- 1 cup sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 cup cocoa
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup spanish peanut
Recipe
- 1 preheat the oven to 350°f.
- 2 in a bowl, combine the butter and sugar, and, using an electric mixer, beat until light and creamy.
- 3 beat in the eggs and vanilla and continue to mix for 2 minutes.
- 4 in another bowl, stir together the flour, cocoa, baking soda, and salt.
- 5 gradually stir the flour mixture into the butter mixture.
- 6 stir in the chocolate chips and nuts.
- 7 drop by tablespoonfuls onto a baking sheet, leaving 2 inches between each mound of dough.
- 8 bake until set, 10-12 minutes.
- 9 let cool for several minutes on the baking sheets before transferring to a wire rack.
