Creamy Onion-potato Soup

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 onions, chopped
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 beef bouillon cubes
  • 3 cups boiling water
  • 1/2 teaspoon tarragon
  • 1 potato, cup up
  • 2 teaspoons wine vinegar
  • 1/2 cup light cream
  • cubed cheese (your choice)
  • chopped peanuts

Recipe

  • 1 saute onions until tender and golden.
  • 2 add oxo cubes, boiling water, tarragon& potato.
  • 3 simmer, uncovered, until potato is cooked (20 min?).
  • 4 puree in a blender or use a hand blender if available.
  • 5 return to pot, add vinegar and bring to a boil.
  • 6 reduce heat, stir in cream (salt& pepper and some green parsley as well).
  • 7 serve and top with cheese cubes and chopped peanuts.
