Creamy Onion-potato Soup

Ingredients
- Servings: 4
- 3 onions, chopped
- 2 tablespoons butter or 2 tablespoons margarine
- 3 beef bouillon cubes
- 3 cups boiling water
- 1/2 teaspoon tarragon
- 1 potato, cup up
- 2 teaspoons wine vinegar
- 1/2 cup light cream
- cubed cheese (your choice)
- chopped peanuts
Recipe
- 1 saute onions until tender and golden.
- 2 add oxo cubes, boiling water, tarragon& potato.
- 3 simmer, uncovered, until potato is cooked (20 min?).
- 4 puree in a blender or use a hand blender if available.
- 5 return to pot, add vinegar and bring to a boil.
- 6 reduce heat, stir in cream (salt& pepper and some green parsley as well).
- 7 serve and top with cheese cubes and chopped peanuts.
