Cucumber Salad

Ingredients

  • Servings: 4
  • 4 medium cucumbers, seeded and diced
  • 2 tablespoons green onions, sliced
  • 2 tablespoons brown sugar
  • 1/2 cup rice vinegar
  • 3 tablespoons soy sauce
  • 2 teaspoons finely chopped peanuts
  • 1/4 teaspoon crushed red pepper flakes

Recipe

  • 1 in lg bowl, combine the first 5 ingredients.
  • 2 mix well and chill for 15 minutes.
  • 3 add peanuts and red pepper flakes.
  • 4 toss well.
