African Crock-pot Soup With Peanut Butter And Lentils

Total Time: 14 hrs Preparation Time: 10 hrs Cook Time: 4 hrs

Ingredients

  • Servings: 6
  • 1 medium yellow onion, chopped
  • 1/4 cup sliced green onion
  • 2 bell peppers, chopped
  • 1 tablespoon minced garlic
  • 2 (14 ounce) cans diced tomatoes with juice
  • 4 cups beef stock
  • 1 teaspoon ground cumin
  • 1 tablespoon dried ancho chile powder
  • 1 teaspoon new mexico chile powder
  • 1 teaspoon aleppo pepper
  • 1/2 cup uncooked brown lentils
  • 1/4 cup uncooked brown rice
  • 1 cup natural-style peanut butter, no sugar added

Recipe

  • 1 put all ingredients except for the peanut butter into a crock pot and stir to mix. cook on high for 4 hours or low for 8 hours. you can stir it once or twice, but it's not necessary.
  • 2 when the time is up, add the peanut butter and stir to mix. cook one more hour on low or 30 minutes on high.
