African Crock-pot Soup With Peanut Butter And Lentils

Ingredients

- 1 medium yellow onion, chopped
- 1/4 cup sliced green onion
- 2 bell peppers, chopped
- 1 tablespoon minced garlic
- 2 (14 ounce) cans diced tomatoes with juice
- 4 cups beef stock
- 1 teaspoon ground cumin
- 1 tablespoon dried ancho chile powder
- 1 teaspoon new mexico chile powder
- 1 teaspoon aleppo pepper
- 1/2 cup uncooked brown lentils
- 1/4 cup uncooked brown rice
- 1 cup natural-style peanut butter, no sugar added
Recipe
- 1 put all ingredients except for the peanut butter into a crock pot and stir to mix. cook on high for 4 hours or low for 8 hours. you can stir it once or twice, but it's not necessary.
- 2 when the time is up, add the peanut butter and stir to mix. cook one more hour on low or 30 minutes on high.
