Asian Chicken Wraps

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 4 cups of shredded chicken meat (about one rotisserie chicken)
  • 8 flour tortillas (10-inch)
  • 2 red bell peppers
  • 1 tablespoon fresh ginger, minced (or grated)
  • 4 cups of chopped romaine lettuce or 4 cups slivered cabbage
  • 1 teaspoon sugar
  • 1/2 cup vegetable oil
  • 1/2 teaspoon crushed red pepper flakes or 1 fresh jalapeno pepper, minced
  • 2 tablespoons red wine vinegar or 2 tablespoons apple cider vinegar
  • 1/4 cup soy sauce
  • 2 tablespoons peanut butter

Recipe

  • 1 shred the chicken and put into a large bowl.
  • 2 seed the peppers and then cut them into long strips.
  • 3 add that to the bowl with the lettuce or cabbage.
  • 4 in your small bowl, combine oil, vinegar and peanut butter and use a whisk or fork to blend evenly.
  • 5 add soy sauce, red pepper flakes, sugar and ginger and stir till well blended.
  • 6 pour the dressing over the chicken and mix well.
  • 7 warm your tortillas and add the mixture.
  • 8 fold two sides of wrap over filling, then roll tightly, ending seam sides down.
