Asian Chicken Wraps

Ingredients
- 4 cups of shredded chicken meat (about one rotisserie chicken)
- 8 flour tortillas (10-inch)
- 2 red bell peppers
- 1 tablespoon fresh ginger, minced (or grated)
- 4 cups of chopped romaine lettuce or 4 cups slivered cabbage
- 1 teaspoon sugar
- 1/2 cup vegetable oil
- 1/2 teaspoon crushed red pepper flakes or 1 fresh jalapeno pepper, minced
- 2 tablespoons red wine vinegar or 2 tablespoons apple cider vinegar
- 1/4 cup soy sauce
- 2 tablespoons peanut butter
Recipe
- 1 shred the chicken and put into a large bowl.
- 2 seed the peppers and then cut them into long strips.
- 3 add that to the bowl with the lettuce or cabbage.
- 4 in your small bowl, combine oil, vinegar and peanut butter and use a whisk or fork to blend evenly.
- 5 add soy sauce, red pepper flakes, sugar and ginger and stir till well blended.
- 6 pour the dressing over the chicken and mix well.
- 7 warm your tortillas and add the mixture.
- 8 fold two sides of wrap over filling, then roll tightly, ending seam sides down.
