Chocolate Butterscotch Pudding Cake

Ingredients
- 1 cup flour
- 1 cup packed brown sugar
- 1/2 cup unsweetened cocoa
- 1 tablespoon instant coffee
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup butterscotch chips
- 1/2 cup milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla
- 1 cup hot water
- whipped cream, if desired
Recipe
- 1 preheat oven to 350.
- 2 grease an 8 inh round cake pan.
- 3 in medium bowl,thoroughly blend the flour, 1/2 cup of the brown sugar, 1/4 cup of the cocoa,coffee, baking powder and salt.
- 4 stir in the butterscotch chips.
- 5 in small bowl, blend the milk, oil, and vanilla.
- 6 add the wet ingredients to the dry and stir until blended.
- 7 spread batter evenly in prepared pan.
- 8 blend together the remaining 1/2 cup brown sugar and the 1/4 cup cocoa.
- 9 sprinkle this mixture on top of the cake batter.
- 10 pour the hot water evenly over the surface of the batter.
- 11 bake for 35-40 minutes until the top looks cake like.
- 12 serve with whipped cream if desired.
