Coconut Peanut Stir Fry Sauce

Ingredients
- 2 tablespoons smooth peanut butter
- 1/2 teaspoon thai red curry paste
- 1 teaspoon fresh ginger, peeled and finely grated
- 1/3 cup canned unsweetened coconut milk, well stirred
- 1/3 cup low sodium chicken broth
- 1 tablespoon fresh lime juice
- 1 pinch sugar
- salt
Recipe
- 1 in a sm. bowl, combine peanut butter, curry paste and ginger. gradually whisk in coconut milk and broth until smooth. stir in the lime juice and sugar and season with salt.
