Coconut Peanut Stir Fry Sauce

Ingredients

  • 2 tablespoons smooth peanut butter
  • 1/2 teaspoon thai red curry paste
  • 1 teaspoon fresh ginger, peeled and finely grated
  • 1/3 cup canned unsweetened coconut milk, well stirred
  • 1/3 cup low sodium chicken broth
  • 1 tablespoon fresh lime juice
  • 1 pinch sugar
  • salt

Recipe

  • 1 in a sm. bowl, combine peanut butter, curry paste and ginger. gradually whisk in coconut milk and broth until smooth. stir in the lime juice and sugar and season with salt.
