Asian Noodles With Lime Peanut Sauce

Ingredients
- 12 ounces linguine
- 2 cups broccoli florets
- 2 cups snow peas, trimmed
- 2 cups sugar snap peas, trimmed
- 1/2 cup unsalted peanuts
- 1/2 cup creamy peanut butter
- 1/4 cup low sodium soy sauce
- 1/4 cup water
- 2 tablespoons rice vinegar
- 2 tablespoons fresh lime juice
- 1 scallion, sliced in 3/4 inch pieces
- 1 tablespoon fresh ginger, grated
- 2 tablespoons brown sugar, packed
- 1/4 teaspoon red pepper flakes
Recipe
- 1 cook pasta according to package directions, drain and rinse under cold water.
- 2 meanwhile, steam broccoli about 3 minutes. add snow peas and sugar snap peas and steam an additional 2 minutes, until all veggies are crisp tender.
- 3 toast peanuts in a dry skillet over medium high heat, about 3 to 5 minutes, stirring.
- 4 make a sauce by combining peanut butter, soy sauce, water, vinegar, lime juice, scallions, ginger, brown sugar and red pepper flakes until smooth.
- 5 toss the pasta with the vegetables and then toss in the peanut sauce. coarsely chop the toasted peanuts and sprinkle over each bowl. serve.
