Broke Guy's Granola Bars

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • unsalted butter, for the pan
  • 1/2 cup old fashioned oats
  • 1/2 cup raw almonds, roughly chopped
  • 1 cup sunflower seeds or 1 cup raw pepitas
  • 1 cup dried fruit
  • 1/4 teaspoon salt (if using salted sunflower seeds, omit)
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup

Recipe

  • 1 heat oven to 350 degrees f.
  • 2 butter an 8-inch square baking pan.
  • 3 spread the oats, almonds and seeds on a rimmed baking sheet. toast, tossing once, until lightly browned (10 to 12 minutes).
  • 4 process the dried fruit in a food processor until finely chopped (2 to 3 minutes).
  • 5 combine the toasted oats, almonds, seeds, chopped apricots and salt in a medium bowl,.
  • 6 combine the almond butter and maple syrup in a small pot. cook over medium heat until bubbling (2 to 3 minutes).
  • 7 pour over the toasted oat mixture and stir to combine.
  • 8 transfer to the prepared pan and smooth the surface with an offset spatula or knife. chill until set, at least 3 hours and up to 3 days.
  • 9 cut into 12 pieces.
