Coconut Rice

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 cups jasmine rice
  • 2 teaspoons peanut oil
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 teaspoon fresh gingerroot, minced
  • 2 cups coconut milk
  • 2 cups water
  • 1/2 teaspoon salt

Recipe

  • 1 rinse jasmine rice under cold running water until water runs clear. let rice drain. set aside.
  • 2 in a saucepan, heat oil over medium heat; cook garlic, onion and ginger root, stirring occasionally, for 5 minutes or until softened. stir in coconut milk and bring to boil.
  • 3 stir in rice; cover, reduce heat to low and simmer for about 20 minutes or until rice is tender and liquid is absorbed. remove from heat; let stand, covered for 5 minutes. add in salt and with a fork blend together.
