Chicken Bang Bang

Ingredients

- 1 1/2 lbs poached chicken breasts
- 3 ounces rice noodles, broken into small pieces
- 3 cloves garlic, lightly smashed
- 1 bunch coriander
- 3 1/2 ounces smooth peanut butter
- 2 tablespoons light soy sauce
- 1 tablespoon runny honey
- 1 teaspoon chili oil
- 1 tablespoon rice vinegar
- 1 teaspoon dry sherry
- 1 large cucumber, peeled,seeded and cut into thin shreds
Recipe
- 1 beat the chicken breasts with a rolling pin to loosen the fibres.
- 2 shred the chicken with two forks.
- 3 pour very hot water over the noodles and soak for 5 minutes.
- 4 in a food processor, blend the garlic, coriander, peanut butter, soy sauce, honey, chilli oil, vinegar and sherry and blend until smooth.
- 5 divide noodles between four serving plates, top with cucumber strips, then the chicken.
- 6 drizzle with peanut sauce without smothering it.
- 7 garnish with extra coriander leaves and serve.
