African Peanut Soup

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1 cup creamy peanut butter
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 1 celery, diced
  • 1 sweet red pepper, diced
  • 2 garlic cloves, minced
  • 1/4 teaspoon chili powder
  • 1 (14 1/2 ounce) can diced tomatoes
  • 2 (14 1/4 ounce) cans chicken stock
  • 1 cup cooked brown rice
  • 1 cup finely chopped cooked chicken

Recipe

  • 1 heat the oil in a large saucepan over medium heat.
  • 2 heat the onion, celery and red pepper.
  • 3 saute, stirring often.
  • 4 stir in the garlic and chili powder.
  • 5 saute 1 minute longer.
  • 6 add the tomatoes with their liquid, stock and peanut butter to the sauceoan.
  • 7 bring to a gentle simmer.
  • 8 stir in the rice and chicken.
