African Peanut Soup

Ingredients
- 1 cup creamy peanut butter
- 1 tablespoon vegetable oil
- 1 onion, diced
- 1 celery, diced
- 1 sweet red pepper, diced
- 2 garlic cloves, minced
- 1/4 teaspoon chili powder
- 1 (14 1/2 ounce) can diced tomatoes
- 2 (14 1/4 ounce) cans chicken stock
- 1 cup cooked brown rice
- 1 cup finely chopped cooked chicken
Recipe
- 1 heat the oil in a large saucepan over medium heat.
- 2 heat the onion, celery and red pepper.
- 3 saute, stirring often.
- 4 stir in the garlic and chili powder.
- 5 saute 1 minute longer.
- 6 add the tomatoes with their liquid, stock and peanut butter to the sauceoan.
- 7 bring to a gentle simmer.
- 8 stir in the rice and chicken.
