Autumn Caramel Apple Cheesecake-pie

Ingredients
- 16 ounces cream cheese, softened
- 1/2 cup sugar
- 1/2 teaspoon vanilla extract
- 2 eggs
- 1/3 cup frozen apple juice concentrate, thawed
- 1 (9 inch) graham cracker crust
- 1/4 cup caramel topping
- 1/4 cup chopped peanuts
Recipe
- 1 combine the cream cheese, sugar and vanilla extract. mix with electric mixer on medium speed until well blended.
- 2 add the eggs. mix until blended, then blend in juice; combine well.
- 3 pour into crust.
- 4 bake at 350° f for 40 minutes or until center is almost set.
- 5 let pie cool, then chill at least 3 hours.
- 6 before serving, when chilled, drizzle caramel over pie, sprinkling nuts as well.
