Broken Shrimp Jambalaya

Ingredients

  • Servings: 6
  • 1 cup peanut oil
  • 4 onions, chopped
  • 5 cloves garlic
  • black pepper
  • 2 bunches shallots
  • 1 bell pepper, chopped
  • pepper
  • 1/4 lb smoked sausage
  • 2 teaspoons paprika
  • salt
  • 1 red pepper
  • 1 1/2 lbs shrimp, broken (cooked)
  • 3 cups rice
  • 5 cups water

Recipe

  • 1 heat oil, add onions, garlic, shallots, bell pepper, smoked sausage, paprika, salt, and peppers and saute well.
  • 2 add shrimp pieces, rice and water.
  • 3 bring to boil, cover, and over very low heat, steam for 20 to 25 minutes.
  • 4 stir with fork and replace cover.
