Carrot Fritters With Chives And Thyme

Ingredients

- 3 cups coarsely grated carrots
- 1 cup flour
- 2 tablespoons chopped fresh chives
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh parsley
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 3/4 cup water
- almond oil or peanut oil (for frying)
Recipe
- 1 mix the carrots, flour, herbs, salt and baking powder together thoroughly.
- 2 gradually add the water to form a thick batter.
- 3 heat one inch of oil in a skillet over medium-high heat.
- 4 drop the carrot batter into the skillet by teaspoons and fry until slightly crisped (about 30 seconds), flipping once.
- 5 drain on a paper towel.
- 6 serve warm.
