A Thai-like Stir Fry For One

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 1
  • 1 chicken breast half
  • 1 tablespoon reduced-fat peanut butter
  • 1 teaspoon soy sauce
  • 1/4 cup salsa
  • 1/4 onion
  • 1/3 bell pepper
  • 1/2 small zucchini
  • 3/4 cup broccoli
  • 1 mushroom

Recipe

  • 1 combine first 4 ingredients and marinate over night.
  • 2 vegetables can be to your liking.
  • 3 after marinating combine over medium heat until chicken is done.
  • 4 enjoy.
