Cornflake Loaf

Ingredients

- 100 g butter, chopped
- 1/2 cup brown sugar
- 2 tablespoons maple syrup
- 3/4 cup corn flakes, lightly crushed
- 1/2 roasted peanuts, chopped
- cake mix
- 125 g butter
- 3/4 cup brown sugar
- 2 eggs
- 1 1/2 cups self raising flour
- 1 teaspoon ground cinnamon
- 1/2 cup buttermilk
- 2 tablespoons maple syrup
Recipe
- 1 grease 14 cms x 21 cms loaf pan, line base and sides with baking paper.
- 2 combine butter, sugar and syrup in bowl, mix well.
- 3 spread over base of pan, sprinkle with cornflakes and nuts.
- 4 cake mix.
- 5 beat all cake batter ingredients in a medium bowl with electric mixer on low speed till combined well and smooth.
- 6 spread this mix over cornflake mixture in pan.
- 7 cook at 180 c for 55 minutes.
- 8 let stand in tin 10 minutes before turning out.
