Cornflake Loaf

Total Time: 1 hr 20 mins Preparation Time: 25 mins Cook Time: 55 mins

Ingredients

  • Servings: 8
  • 100 g butter, chopped
  • 1/2 cup brown sugar
  • 2 tablespoons maple syrup
  • 3/4 cup corn flakes, lightly crushed
  • 1/2 roasted peanuts, chopped
  • cake mix
  • 125 g butter
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/2 cups self raising flour
  • 1 teaspoon ground cinnamon
  • 1/2 cup buttermilk
  • 2 tablespoons maple syrup

Recipe

  • 1 grease 14 cms x 21 cms loaf pan, line base and sides with baking paper.
  • 2 combine butter, sugar and syrup in bowl, mix well.
  • 3 spread over base of pan, sprinkle with cornflakes and nuts.
  • 4 cake mix.
  • 5 beat all cake batter ingredients in a medium bowl with electric mixer on low speed till combined well and smooth.
  • 6 spread this mix over cornflake mixture in pan.
  • 7 cook at 180 c for 55 minutes.
  • 8 let stand in tin 10 minutes before turning out.
