Curried Peanut Rice

Ingredients
- 2 tablespoons peanut oil
- 1 cup regular long grain rice, uncooked
- 1/4 cup sliced green onion
- 2 teaspoons curry powder
- 1 (14 ounce) can chicken broth
- 1/2 cup frozen peas, thawed
- 1/2 cup unsalted dry roasted peanuts
Recipe
- 1 in a 2 quart saucepan over medium heat, in hot oil, cook rice and green onion with curry powder until rice is browned.
- 2 add broth, heat to boiling, reduce heat to low.
- 3 cover; simmer 20 minutes.
- 4 add peas and peanuts.
- 5 cook 5 minutes more.
