Crockpot Thai Chicken

Total Time: 4 hrs Preparation Time: 30 mins Cook Time: 3 hrs 30 mins

Ingredients

  • Servings: 8
  • 2 -3 lbs chicken, skinned
  • 1 red bell pepper
  • 1 onion, chopped
  • 1/2 cup chicken broth
  • 1/4 cup soy sauce
  • 1 tablespoon cumin
  • 3 garlic cloves
  • 1/2 teaspoon red chili pepper flakes
  • 1 teaspoon salt
  • pepper, to taste
  • 2 tablespoons cornstarch
  • 2/3 cup creamy peanut butter
  • 1 tablespoon soy sauce
  • 1/4 cup lime juice
  • 1/4 cup cilantro, chopped
  • 3 green onions, chopped
  • 1/2 cup roasted peanuts, chopped

Recipe

  • 1 place chicken, bell pepper and onion in crockpot.
  • 2 mix soy sauce, broth and spices together.
  • 3 pour mixture over chicken.
  • 4 cook on high for 3 hours.
  • 5 whisk peanut butter, starch, 1 tablespoon of soy sauce and lime juice together.
  • 6 add 1 cup of juices from crock pot and mix until smooth.
  • 7 stir mixture into crock pot.
  • 8 cook 30 minutes more.
  • 9 garnish with cilantro, green onion and peanuts.
  • 10 serve with rice.
