Crockpot Thai Chicken

Ingredients

- 2 -3 lbs chicken, skinned
- 1 red bell pepper
- 1 onion, chopped
- 1/2 cup chicken broth
- 1/4 cup soy sauce
- 1 tablespoon cumin
- 3 garlic cloves
- 1/2 teaspoon red chili pepper flakes
- 1 teaspoon salt
- pepper, to taste
- 2 tablespoons cornstarch
- 2/3 cup creamy peanut butter
- 1 tablespoon soy sauce
- 1/4 cup lime juice
- 1/4 cup cilantro, chopped
- 3 green onions, chopped
- 1/2 cup roasted peanuts, chopped
Recipe
- 1 place chicken, bell pepper and onion in crockpot.
- 2 mix soy sauce, broth and spices together.
- 3 pour mixture over chicken.
- 4 cook on high for 3 hours.
- 5 whisk peanut butter, starch, 1 tablespoon of soy sauce and lime juice together.
- 6 add 1 cup of juices from crock pot and mix until smooth.
- 7 stir mixture into crock pot.
- 8 cook 30 minutes more.
- 9 garnish with cilantro, green onion and peanuts.
- 10 serve with rice.
