Cranberry Nut Energy Bars

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 2 cups raisins
  • 2 cups oatmeal
  • 2 1/2 cups rice krispies
  • 1 cup peanuts
  • 1 cup dried cranberries or 1 cup other dried fruit
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 (10 1/2 ounce) bag marshmallows

Recipe

  • 1 preheat oven to 350°.
  • 2 toast oatmeal on large baking sheet 13 x 9 pan or 15 x 10 jellyroll pan for 10 minutes.
  • 3 add raisins and rice krispies and toast another 5 minutes.
  • 4 add peanuts and dried fruit and set aside.
  • 5 in a large pan, melt butter, peanut butter and marshmallows over low heat.
  • 6 when smooth and combined, add oatmeal mixture.
  • 7 stir to coat.
  • 8 press firmly into 9x13 pan.
  • 9 cool and cut into 20 bars.
  • 10 note: i use a large dutch oven type pot to make mixing easier.
  • 11 you can also reduce or eliminate butter if you want to lower the fat.
