Clams In Black Bean Sauce

Ingredients

- 2 lbs small clams
- 1 tablespoon vegetables or 1 tablespoon peanut oil
- 1 teaspoon fresh gingerroot, finely chopped
- 1 teaspoon garlic, finely chopped
- 1 tablespoon fermented black beans, rinsed and coarsely chopped
- 2 teaspoons shaoxing rice wine
- 1 tablespoon scallion, finely chopped
- 1 teaspoon salt (optional)
Recipe
- 1 start by washing clams throughly.
- 2 soak them in water until it is time for use.
- 3 in a wok heat oil, and stir fry the ginger-root and garlic until fragrant.
- 4 add the black beans and cook for 1 minute.
- 5 turn heat to high, drain the clams and add to the wok.
- 6 add the shaoxing rice wine, and stir fry (mixing) for about 2 minutes.
- 7 cover and cook for about 3 minutes.
- 8 add the scallions.
- 9 add salt if needed.
- 10 serve immediately.
