Clams In Black Bean Sauce

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 lbs small clams
  • 1 tablespoon vegetables or 1 tablespoon peanut oil
  • 1 teaspoon fresh gingerroot, finely chopped
  • 1 teaspoon garlic, finely chopped
  • 1 tablespoon fermented black beans, rinsed and coarsely chopped
  • 2 teaspoons shaoxing rice wine
  • 1 tablespoon scallion, finely chopped
  • 1 teaspoon salt (optional)

Recipe

  • 1 start by washing clams throughly.
  • 2 soak them in water until it is time for use.
  • 3 in a wok heat oil, and stir fry the ginger-root and garlic until fragrant.
  • 4 add the black beans and cook for 1 minute.
  • 5 turn heat to high, drain the clams and add to the wok.
  • 6 add the shaoxing rice wine, and stir fry (mixing) for about 2 minutes.
  • 7 cover and cook for about 3 minutes.
  • 8 add the scallions.
  • 9 add salt if needed.
  • 10 serve immediately.
