Che Chuoi-bananas In Coconut Milk

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 500 ml water
  • 75 g tapioca
  • 500 ml coconut milk
  • 6 bananas, not overly ripe, sliced into thin slices
  • 150 g sugar
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • salted peanuts, for decoration

Recipe

  • 1 cook the tapioca with the water for about 20 minutes while stirring.
  • 2 add the coconut milk and cook for a further 5 minutes.
  • 3 add the bananas, salt, sugar, and vanilla extract and cook for a further 5 minutes. serve either warm or at room temperature with some chopped salted peanuts on top of each serving.
