Che Chuoi-bananas In Coconut Milk

Ingredients
- Servings: 4
- 500 ml water
- 75 g tapioca
- 500 ml coconut milk
- 6 bananas, not overly ripe, sliced into thin slices
- 150 g sugar
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- salted peanuts, for decoration
Recipe
- 1 cook the tapioca with the water for about 20 minutes while stirring.
- 2 add the coconut milk and cook for a further 5 minutes.
- 3 add the bananas, salt, sugar, and vanilla extract and cook for a further 5 minutes. serve either warm or at room temperature with some chopped salted peanuts on top of each serving.
