Chocolate Quinoa Breakfast Cookies

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • 2 cups quinoa (cooked, remember to rinse thoroughly in a fine sieve before cooking)
  • 1/2 cup smooth peanut butter
  • 3 tablespoons maple syrup
  • 2/3 cup quick-cooking oats
  • 3 tablespoons cocoa powder
  • 1/4 teaspoon kosher salt

Recipe

  • 1 mix all ingredients well and drop by large spoonfuls onto a prepared baking sheet. bake at 350 degrees f. for 18-20 minutes or until lightly firm.
